If you’re looking for something to do with radishes, this is one of the tastiest easiest things you can prepare, and you can do it without cooking at all! (A great option in the summer.) This recipe is easy to vary the amount of ingredients based on your personal taste.
2-3 ears sweet corn (cooked or uncooked, up to you!)
1 bunch of radishes (about 5 or 6), thinly sliced
3 tablespoons fresh lemon or lime juice
2-4 tablespoons fresh cilantro
salt & pepper to taste
Optional: 1/2 seeded jalapeno, finely chopped
Mix all ingredients together and refrigerate until ready to serve. Keeps for a few days in the refrigerator.
